This is my all time favorite dessert recipe. I love it because it is so easy to make. It uses ingredients that I always have on hand. And it comes together quickly. You can have it for an everyday dessert or you can serve it at a function and everyone will think you’ve made a fancy dish. {Just don’t tell them how easy it really was}

Gather all your ingredients:
It is mostly staples and things you will have on hand. Mix up your crepes. You want them to be very thin. Experts say the key to a good crepe is getting all the lumps out. Truthfully this is rather hard to do. Mine always have a few lumps and no one ever cares. They taste just as good. I always add a little bit of Almond flavoring to my batter. I grew up in Germany and it reminds me of my childhood. It is super yummy in the batter.
While you are cooking your crepes, slice up your bananas. Or have you handy helper do this for you. My sweet daughter helped me out. The next step is what makes the yummy caramel sauce.

Yep, that’s brown sugar. You will want to cook these until the sugar melts and becomes a caramel sauce.
See how good that looks. You will want to watch this closely because you want the yummy sauce but you definitely do not want mushy bananas. So watch how long you cook it and take it off the heat as soon as it’s done.
Take your cream cheese and mix it with the COOL WHIP whipped topping. Now it’s time to assemble.
Take a crepe and put some of the banana mixture on it. Make sure and spoon some of the caramel sauce too.
Take some of the COOL WHIP and cream cheese mixture and put it on top of the bananas. This layer is what makes this a banana split crepe. It adds the light flufflyness in this crepe. Without it you would have a dense, rich, sugary crepe. It definately needs the COOL WHIP.
Fold over the top of the crepe. Take your melted chocolate chips and add it to the top. Yum!!
Here’s the complete recipe for you:
Crepes
1 1/2 cups flour
3 eggs
1/4 teaspoon salt
3 tablespoons butter melted
Mix flour and eggs together. Add salt and butter. Stir till well mixed. Cook over medium high heat.
COOL WHIP mixture
8 oz brick of room temp cream cheese
1 container of COOL WHIP whipped topping
Mix together
Bananas and Caramel sauce
4 bananas
1/2 cup brown sugar
slice bananas into pan. Add brown sugar to top. Cook until sugar is melted and caramel sauce is made.
Start with a crepe. Layer bananas and caramel sauce on bottom. Then add COOL WHIP mixture. Fold crepe over and Drizzle with melted chocolate chips.
This is a great recipe for Easter brunch. You could also serve secret ingredient deviled eggs. I hope you try this recipe and let me know if you like it. I have also made it with other fruit. For valentines day we used cherry pie filling. Most any pie filling will work. {omit the brown sugar step}. You could also use some canned fruits. It would also be yummy with fresh strawberries, raspberries or other fruits. Enjoy!!
