Copycat recipe: Chili’s southwest eggrolls

I love appetizers!  Anyone else with me?  I sometimes order an appetizer as my meal.  Chili’s southwest eggrolls are one of my favorites.  I am not getting paid to say this, just love them!  I was trying to knock them off and make them at home and I think they came out great.

These are yummy!!  I smashed up an avocado and put some ranch with it for dipping.  They are not the healthiest because they are fried.  I don’t make them that often but they are great as a special treat.

Copycat recipe:  Chili’s southwest eggrolls

Boneless skinless chicken breast

3 tablespoon vegetable oil

1-2  red bell pepper chopped

green onions

1 can corn

1 can jalapeno peppers or green chilis.

1 can black beans rinsed and drained

6 tablespoons frozen spinach, thawed and drained

1  1/2 teaspoon cumin

1  1/2 teaspoon chili powder

pinch of  salt

dash cayenne pepper

2-1/4 cup shredded Monterey Jack cheese

Egg Roll wrappers

Cook and cube chicken.  Sautee red pepper and onion.  Add chicken to pan.  Add the corn, black beans, peppers or chilis, spinach, cumin, chili powder, salt, and cayenne pepper to the pan.  Cook for 5 minutes stirring well.  Remove from heat and add cheese.  Spoon mixture into eggroll wrappers.  Fold and roll up using water to seal the edges.  Heat oil and fry eggrolls.

To go along with your Chili’s obsession, a coupon for free chips and queso.  Who doesn’t love free?

I have seen people say you can do eggrolls in the oven and they come out well but I have tried that twice now and had no luck.  Mine get cooked well in certain spots and remain uncooked in others.  If anyone has tried this and got it to work, I would love to hear your tips.
