My favorite Christmas Candy

Homemade Almond Joy is my all time FAVORITE Christmas candy.  It is so good, you will absolutely not regret making this!!

I seriously eat so much more of this than I ever should.  My mom first made this recipe for Christmas years ago.  Ever since then it’s been a must make for us!

The other great thing about this recipe is, it never fails.  I have never had it not work out.  Which can easily happen with other homemade candies.  They can seperate or crystalize.  But I’ve never had that happen with this.  As if you need more reasons to try this recipe.

Homemade Almond Joy Candy

2 cups light corn syrup

1 cup sugar

1/4 cup butter

1/2 tsp salt

1 cup chopped roasted almonds

1 14 ounce package flaked coconut

1 tsp almond extract

In a heavy pan, combine corn syrup, butter, sugar and salt.  Cook over medium high heat and stir until mixture comes to a full boil.  Continue stirring and cook until Soft ball stage or 230 degrees.  Remove from heat and stir in nuts, almond extract and coconut.   Press into prepared pan.  When cooled and set cut into squares.

These can be dipped in chocolate but I always opt not to.  Roasting the almonds is a MUST.  I also usually double the almonds and the coconut.
