Chocolate Strawberry Cream cupcakes

Twice a month I have a group of 11 year old girls over and we craft, sing songs, learn etc.  I love doing this.  They are such fun girls to get to know.

They always expect treats.  Always.  Which is fine with me.  So I may be showing more treat recipes here on the blog.  I made these Chocolate Strawberry Cream cupcakes to celebrate a birthday we had in the group.

I am so making these chocolate strawberry cream cupcakes for my daughter's birthday.

The girls all LOVED them!  They went back for seconds.  I loved them also.  The chocolate and strawberry frosting went so well together.  Plus they look pretty lol.

These chocolate Strawberry cream cupackes look so amazing!

Chocolate cupcakes

Ingredients

  • 1/3 cups flour
  • 1/4 tsp baking soda
  • 2 tsp baking powder
  • 3/4 cup cocoa powder
  • 1/8 tsp salt
  • 3 T butter
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 cap full vanilla
  • 1 cup milk

Instructions

  1. Preheat oven to 350.
  2. Sift together flour, baking powder, baking soda, cocoa powder and salt.
  3. In separate bowl, cream together sugar and butter.
  4. Add eggs 1 at a time.
  5. Add vanilla
  6. Alternate adding flour mixture and milk.
  7. Pour into lined cupcake pan.
  8. Bake 15 to 17 mins. or until toothpick inserted in middle comes out clean.

Strawberry Cream frosting

Ingredients

  • 1 {8 oz} package cream cheese
  • 1/2 cup white sugar
  • 1 1/2 tsp strawberry extract
  • 2 cups heavy cream

Instructions

  1. Combine the cream cheese, sugar and strawberry extract.
  2. Mix until smooth.
  3. While mixing slowly add cream.
  4. Continue whipping until cream can hold a stiff peak.

These look so good.  My daughter would love these Chocolate Strawberry cupcakes!

These are a fun treat to make and they taste soo good.  The extract was enough to get this light pink color but if you want, you can always add a few drops of food coloring.  Let me know if you make these.  I’d love to hear how they turn out.
