My husband has a favorite Christmas candy. I make it for him every year. It makes me happy to make him happy.
It reminds him of his childhood at Christmas time and I love bringing back those happy memories.
This recipe is basically butter and sugar. That’s what makes it so yummy.
You need four cubes of butter.
Melt them in a big pot. Then add the sugar and water.
You will need a good stirring spoon with a sturdy handle and a flat bottom.
This is because you will need to stir this mixture constantly. And having a flat spoon on the bottom will help you scrape the bottom of the pan. That is important because if you don’t, things could burn on the bottom of the pan. Which will mess up your toffee.
Let this mixture boil until you hit hard 310 degrees F on your candy thermometer or hard crack stage. Then dump it into a pan with sides.
Shave some chocolate on top. The hot toffee will melt the chocolate and you can then spread it around. The last step is to grate some nuts on the top of that. You can use walnuts, pecans, almonds, what ever you have on hand. I used pecans.
Put it in a cool place or stick it in the fridge until it sets up. Use the point of a sharp knife to crack the toffee and enjoy.
It is so yummy! Like Christmas in a bite.
