Hi everyone. I hope you all had a great Thanksgiving. I am always looking for ways to use some of my leftover turkey. And sometimes after eating a big thanksgiving dinner, I want something a little lighter. This year, I came up with this pasta dish:
My kids all thought it was so yummy! It’s pretty easy to make also. Of course you need to start with the right ingredients. What makes this pasta so good is the Olive Oil. I was shopping at Walmart and saw these Star Olive oils.
For this dish, you could go with the Star extra virgin olive oil for veggies or the poultry/fish one. I chose the veggie kind.

Once you’ve got all your ingredients, start your pasta cooking.
While that is going, chop up your tomatoes.
You can use grape or cherry tomatoes. In a pinch, you can also use canned tomatoes.
In a pan, saute the tomatoes, a few handfuls of spinach and your leftover turkey. Pour a few turns of your Olive oil in the pan and throw in some garlic too.
Looks so pretty and healthy doesn’t it?
Saute this just until the spinach barley starts to wilt. It should look like this:
Once you have reached this stage, add in your cooked pasta. For the sauce you are going to pour in more olive oil. You can do this to taste, but don’t put more than 1/4 cup. Otherwise it gets too oily. As a final touch, sprinkle some Parmesan cheese on top.
If you don’t have the turkey, you can easily substitute chicken or leave it meatless.
