Now I know what you are thinking…Mac and cheese is not a healthy meal. But you would be wrong. I am going to show you what we do to make our favorite comfort food part of our healthy eating habits.
Doesn’t that look yummy? So let me tell you what I did to make it healthier.
For the base, I used cream cheese. If you use organic products with no artificial ingredients and no preservatives, you can absolutely do full fat dairy products. Look at the ingredient list. It should have 5 ingredients or less and all be pronounceable. If you are going for a low fat eating plan, use fat free cream cheese.
Regular cheese would fall into the same category as the cream cheese. Look for no artificial ingredients or preservatives etc. You can also try part skim milk cheese.
For the noodles, I used brown rice flour noodles. You could also use whole wheat noodles but make sure it says whole wheat and not just wheat.
I decided to add some chicken for protein. But here is my thing with adding chicken to meals. Sometimes by the time I have seasoned and cooked up my chicken I think I should just make a chicken meal for my family. Because to do the pasta is another dish to make and it feels like I am making two dishes for one dinner. Am I the only one?
So the other day I stumbled upon these at Walmart.
That’s right Tyson came out with a line of grilled and ready products. Let me tell you these things are so easy and convenient. I keep a few bags in my freezer and it makes it so easy to add chicken to meals.
Walmart has these Grilled and Ready Products on rollback right now for only $5.87. It’s a great time to stock up.
For this recipe you can get whatever kind you want. There are different seasoned options, different cuts etc. Pick what your family likes best. We went with:
We picked the oven roasted diced chicken breast. And threw it into this recipe. My kids loved it.
