Healthy Pumpkin Waffle recipe

Today I have a great sweet treat to share with you.  What I love about these is that they can be used for a dessert or also for a meal.

These pumpkin waffles are so yummy.  I have been experimenting with clean eating and real food for my family so this recipe {minus the powdered sugar on top} is a clean recipe also.

I would serve these with real maple syrup.  Let me tell you that stuff tastes good!  My daughters also like to take these in their lunches they put cream cheese on the waffles and eat them like a sandwich.  So I always make a double batch when I do these.  They freeze beautifully.

Healthy Pumpkin Waffles


  • 1 1/2 cups whole wheat flour
  • 1 tablespoon honey
  • 1/2 tsp cinamon
  • 1/8 tsp salt
  • 1 3/4 cups milk
  • 1/4 cup coconut oil
  • 2 eggs
  • 1/4 tsp baking soda
  • 1-2 cups pumpkin


  1. Mix together the eggs, milk, oil, honey, cinnamon, pumpkin and baking soda.
  2. Add in the flour, baking powder, and salt and whisk together until the large lumps disappear.
  3. Ladle into waffle maker and cook until done.
  4. Top with warm pure maple syrup.

My family love breakfast for dinner so we make these sometimes.  Since they freeze well, they can be good for a quick dinner on a busy night.  Hope you enjoy them too!
