Make the best ever {secret ingredient} Deviled eggs

With Easter on the way, there are a lot of hard boiled eggs around.  Let me tell you, I make the BEST deviled eggs ever!!  So good that I get requests to bring them to family parties all the time.  I know for sure I am bringing deviled eggs to Thanksgiving with the hubbs family every year.   What makes them so stinking awesome…it’s one secret ingredient.  And I will happily share it with you!!

I make these so much that I had to invest in a deviled egg carrier.  Have you ever tried to transport rolly circular eggs?  Yeah, we only did that once.

Start with hard boiled eggs.

Peel and rinse them.  {there’s nothing like getting eggshell in your final product.  Avoid this!!}  Then slice your eggs in half.

Scoop out all the yolks and put them into a bowl.

Use a fork to mash them up.  It’s important to get them pretty well mashed.

Now you are going to add your ingredients.  Add your mayo and mix it up.  Then comes the secret ingredient.

SUGAR

That’s right sugar.  But these are not sweet deviled eggs.  I prefer powdered sugar, but you can use granulated if you have to.  Make sure and mix it really well so you are not biting into sugar crystals.  Or just use powdered sugar and you don’t have to worry about that.  The amount you will use depends on how many you are making.  This was a dozen eggs.  I just shake the powdered sugar out from the bag into the bowl of egg yolks.  I put three shakes into this batch.  {I know so technical}  Really just taste it and adjust the sugar to taste.  Remember this is not a sweet mixture.  You just want a little after taste of “hum what was that, it was yummy.”  Start with less sugar, you can always add more later.  Taste as you go.

From there you can add whatever ingredients you like or leave it just like that.  I usually leave them plain but it depends on my mood.

To fill the eggs, I like to use a pastry bag.

If you do this it will make them cuter.  {I always do this}  You need to use a star tip like the ones shown above.  I usually use the more open tip but you can use either.   Do not use a regular sized tip.  You will get chunks of yolk stuck in the regualr sized ones and it will be a frustrating mess.  These are the large tips and they work great.

I fill my eggs by just squeezing downward and it makes a flower shape.

Super cute and super yummy.  You might think sugar is wierd in these but try it.  You will like it.  And remember you are not making a dessert here.  It should still be a savory item.  With a little ooh that was yummy aftertaste.

Deviled eggs are a great go to for potlucks.  They are super easy and super cheap to make.  A carton of eggs is only a couple bucks and you most likely have all the other ingredients on hand.

I think I am on an Easter Egg roll this week {hehe…egg roll}  I did this project back in the early days and I wanted to share it with those of you who weren’t around then.  Which is pretty much everyone. So…want to learn how to make custom Easter Eggs?

Yes I had a lot to learn from those early days, {photography comes to mind} but this is still a great tutorial.  The most important tip and your eggs will not turn out without this is:  let your boiled eggs cool off before attempting.  You want to do this on COLD eggs.  Otherwise it won’t work period.

Free Printable Easter Eggs

Last Easter, when I was a very very beginning blogger, I made some printables.   And I LOVED them!! But I made them for a guest post I did on another blog.  Here on my blog all you saw was “please go somewhere else to get the download links.”  This year I wanted to repost them here so you guys {who were probably all not here back then} could get them from my blog.  Only thing is, my laptop is currently in the mail to the manufacturer for repairs.  So I remade them.  If you happen to have seen the originals and these look a little different, that’s why.  I also made 2 extra ones for you guys this year.

These are all sized to 8 x 10.  They will print well smaller but won’t be optimal in larger sizes.

I really hope you enjoy these.  I can see them as a cute grouping or hanging in a line down a hallway.  Or several on a mantle.  I love how graphic they are.  Maybe it’s the winter blahs but the punch of color is very cheery to me.  Plus the flowers remind me of Hawaii which is one of my absolute favorite places.  I sure hope you like them as much as I do!!

Cute skirt with a ruffle–{could be your Easter skirt}

I have been thinking of Spring and Easter and wanted to make a cute skirt for my daughters.  Of course, once it was made I couldn’t wait till Easter to let her wear it.  Not to mention that she was there while I was making it.  And she was measured and she tried it on several times.
 
For the skirt base, you just need to cut out 2 large rectangles. Measure from your child’s waist down to where you want the length to hit.  Then add an inch.   For my daughter I used standard 45 in. material and I used one width for the front and one for the back.  If your child is younger you may need to only cut one width depending on how full you want the skirt.  Sew one side seam by placing right sides together and sewing down the long vertical seam.

I used organza for the ruffle.  Organza frays like crazy so I decided to make the ruffle a tube.  That would keep the fraying to a minimum.  I wanted a three inch ruffle so I would need 6 inches of organza plus a seam allowance so I cut my material to 6.5 inches.Then I put right sides together and sewed down the long strip.  Make sure to zig zag or serge the seam because Organza frays so much {have I said that enough yet} Then turn the tube right side out.

I have to say I hate ironing.  I seldom do it at home.  In fact I meticulously fold my clothes so they aren’t wrinkly and I don’t have to iron. But in sewing it is a necessary evil.  See the difference when your organza tube is ironed??  It makes it so much easier to work with.  Plus, I heard somewhere that ironing when you sew takes ten pounds off.  I don’t know if it’s true but this is one time I take the iron out just in case.

Now we need to ruffle up the tube we just made.  Put your tension on the highest it can go.  {should be somewhere around a 9}  Then put your stitch length on the highest it can go. {4 or 5}  Sew a line straight down the middle of your tube.  It should ruffle as you go.  You should end up with something like this:

The next step is to hem your skirt.  Take the big rectangle you made earlier and fold the bottom edge down 1/4 inch.  Press it down.  Then fold down another 1/4 inch and press it again.  Top stitch along the bottom.  It doesn’t need to be fancy because your ruffle goes here.  I places my ruffle in a kind of hills and valleys pattern like so:

I did that to give it a little more height on the ruffle.  You can just sew a straight line if you prefer.
 
When you have the ruffle sewed on,you need to sew up the other side seam.  Right sides together sew vertically up that long seam.  Now, it’s time to make your casing for the elastic at the waist.  Fold your top edge down 1/4 inch and press.  Then fold down 1 inch and press.  Sew along the edge leaving a opening about an inch or two to feed your elastic in.  Measure your child’s waist and cut the elastic to that measurement.  I like to use a safety pin to feed my elastic through the casing.  When you have it fed through take the ends of your elastic and sew them together.  Then go ahead and close up the opening in your casing.    I like to top stitch along my elastic a couple times.  There’s nothing worse than elastic that has twisted and turned.  The top stitch prevents that. 
And viola…you have a cute ruffly skirt for spring or Easter.

Not your ordinary dye job

I know what you are thinking but you would be wrong.  No I’m not talking about hair but these:

So now that we have that settled lets see if we can kick your ordinary Easter Eggs up a notch {or two}.  And end up with these:

Take your handy dandy glue gun {that’s right I said glue gun} and draw on the egg with glue.

Then dunk the egg into your dye mixture.  Let it sit in there for as long as you want until you get the color you want.  When you pull it out it will look like this:

Peel the glue off the egg and here is your final result:

Fast, fun and easy.  The perfect trifecta.  {Yep I just said trifecta.  Whatcha gonna do about it?} Here are some variations you can make:

If you take your egg from the dye and let it drip dry and don’t peel the glue right away, the dye will get under the glue and you will get more of a grungy look.

You can make a bunch of little shapes:

Or a big shape:

You can take an egg you have already done and put it back into a different color dye:

Make a spotted “animal” egg:

So definitely not your typical Easter Eggs.  Some tips to remember:

  • You must use cold eggs.  If you use warm or just off the burner eggs it won’t work.  The hot glue and hot egg attract each other too much and bond.  Then when you go to peal the glue off it sticks and peels the shell with it.  {Science according to Connie.  But seriously use cold eggs}
