I’m super excited for our guest today.  Jen is a blogger I have recently gotten to know and I LOVE her!!  If you want awesome yummy pinworthy recipes you need to subscribe to her blog Jen’s favorite cookies.

For those of you unfamiliar with me, let me introduce myself. I’m Jen. I love to bake cookies and blog about it. I also teach piano and drive the carpool and go to church. Oh, and… my husband and three children are all picky eaters. Picky eaters who somehow all love coconut. It’s kindof weird, when you think about it.

Today, while driving my son to
school, I said, “I need to bake today. What kind of cookies should I
make?” He looked at me like I was crazy… like the answer was so
completely obvious to everyone else. “Didn’t you hear me last night?” he
said. “You should make coconut cream cookies!” The theme continued when
I returned home, and mentioned the conversation to my husband and
daughter. They both agreed that coconut cream sounded great. I wondered
aloud how I would achieve such a feat, having never heard of a cookie like
it. My daughter replied very matter of factly, “Just make coconut cream
pie, and then turn it into a cookie.”

Duh, mom.

I’ve been working on getting my site re-designed. It was just time for an
upgrade. While my designer is slaving away on my site design, I figured
it was as good an excuse as any to give my home office a re-design too.
Not really a re-design, per se. More like… a cleaning. My office is
a complete disaster area. It’s a pig sty. It looks like an episode of
“Hoarders.” I freely admit it. My goal is to have my office working like
a well-oiled machine by the time I get my blog working like a well-oiled
machine. So, like 1-2 weeks from now. And trust me, I’m going to need
all that time.

I’ve decided to use this week’s cookie as my
office-cleaning inspiration. Yeah, I know it sounds weird. The cookie is
simple, clean, white. It’s unfettered, unspotted, and
un-covered-in-chocolate. I want my office to be as beautiful and simple as this cookie. Wish me luck.

I’m well practiced in the fine art of procrastination. For instance, I have a goal to clean some of the garbage out of the office today, but I’m spending my time baking Coconut Cream Cookies. And frosting them. And writing about baking and frosting them. And writing about not doing my cleaning.

I think I need a Diet Coke.

I actually did take my daughters advice.
Sort of. I used coconut cream pudding mix to create these cookies. The
last time I made cookies
with pudding in them
, they were extremely well-received. They are
definitely one of my more popular cookies around this house. I have a
feeling this version will be very well received, too.


Coconut Cream
Cookies

Yield: About 3 dozen cookies

 

 

Recipe Type: Cookies
Cook time: 9 mins
Total time: 9 mins
Serves: 3 dozen
A coconut cookie made with
pudding mix and covered in vanilla frosting
Ingredients
  • FOR COOKIE:
  • 3/4 cup butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 tsp. baking soda
  • 1 (3 oz.) box coconut cream pudding mix
  • 2 cups flour
  • 1/2 cup shredded coconut
  • FOR FROSTING:
  • 4 T. butter, softened
  • 2 T. milk
  • 2-3 cups powdered sugar
  • 1 tsp. vanilla
Instructions
  1. Beat butter and sugars. Add eggs and vanilla and
    mix well.
  2. Add pudding mix, soda, and flour, and mix until
    just combined.
  3. Add coconut and mix just enough to incorporate.
  4. Drop scoops onto baking sheet, and bake at 350
    degrees for 8-10 min.
  5. FOR FROSTING:
  6. Combine all ingredients and mix well. Adjust
    consistency by adding more powdered sugar or milk.
  7. Frost cooled cookies

The project I want to share today is a Mother’s Day gift idea.  I thought and thought of what I could do for my mother for Mother’s Day.  I scoured my brain for things she loves and came up with two things that would work together.  She loves to garden and she loves tea cups and saucers.  She has a huge collection of tea cups and saucers, but she doesn’t have a teacup with a plant in it.  I decided to put two of her favorite things together and make this:

Here’s what you do:  Find a teacup and saucer.

Use something to glue the cup to the saucer.  I used Liquid Nails.

Put a few small stones in the bottom for drainage.

Add top soil.

Add your succulents. Succulents are great because they don’t require a lot of watering or a lot of upkeep.

A simple inexpensive gift.  If your mother isn’t interested in tea cups you could use old decorative tins or small baskets.  Use your imagination!  Just make sure you add small stones for drainage.

Hello everyone,  My name is LE and I have my own small blog at les-random-thoughts.blogspot.com. I feature, basically, random things that the world might find interesting. I feature a daily “Today in Geek History” for all my fellow geeks out there, and I post things from political comments to recipes that you should try, to pictures that I share around Facebook. Basically, whatever I want to post, I will. With the exception of Geek History, I post my random thoughts weekly. 
 
Do you remember the Measured By The Heart post about Oreos inside of a chocolate chip cookie? Just in case you need you need another look, here’s the link here.
 Well, I was thinking of trying this for so long, but I never got the needed Oreos. But I did happen to get a box of Girl Scout Cookies. Of course they were the beloved thin mints. I swear there must be crack in the ingredients. Well, I had googled recipes, and found some that were worth it, but they called for over a box and a half of thin mints. I can’t give that much up!! They’re expensive and, well, they’re mine. So I decided to try Connie’s recipe with sugar cookies and Thin Mints. Why not right? 
 
 
So I went to allrecipes.com and found a basic sugar cookie recipe, and following a page out of Connie’s playbook, I baked them in a cupcake tin I borrowed from my neighbor. (Note to self: Ask for a cupcake tin for Christmas). A recipe for 36 cookies made the 12 slot tin, with a little leftover that my husband ate (grrr!). Scoop some cookie dough, add a cookie, and top with more dough. That’s all there is to it.
 

 
Now, I had no idea how to cook this, so I turned on my oven at 350 F for 10 minutes. FYI: My oven runs hot, so you might want to adjust temperature or cooking time. Basically until the cookie is golden brown. I mean, they were good, but they weren’t great. It was soft cookie and a slight crunch of the thin mint. The thin mint never melted though, and that was a thing, so… Maybe next time, I will place the thin mint on top instead of sandwiching it in between. I would have also cooked it for a few minutes longer, and if I was going to sandwich it again, I would double up the thin mints.
 
Thanks L.E. I still think that sounds yummy.  The oreos never melted in my Oreo Suprise cookies.  But they do  soften a little.  Thin mints are smaller so maybe using two and less sugar cookie?  Hum I will have to experiment…you guys go check out Random Nonsense!!

The Best Yellow Cake recipe

The Best Yellow Cake Recipe Ever

 

 The birthday cake is one of the most important parts of any birthday celebration. A store bought cake can be tasty and cute but every time I’ve ever had a store bought cake, it’s been missing that little extra something. When I was a kid I used to beg my mom to make the yellow cake she bestowed upon me each year for my birthday. It wasn’t until I was in college that I discovered she lifted the recipe off a Duncan Hines box. Homemade is the way to go in my opinion and I have the perfect yellow cake recipe for the next birthday in your house.

 

You’ll need 4 cups and 2 tablespoons of cake flour, 2 tsp baking powder, 1.5 tsp baking soda, 1 tsp table salt, 2 sticks of softened unsalted butter, 2 cups sugar, 2 teaspoons pure vanilla extract, 4 large eggs, and 2 cups of shaken buttermilk.

 

Begin by preheating the oven to 350 degrees. Grease the two 9-inch round cake pans and place parchment paper in the pans and grease those as well.

 

Mix the flour, baking powder, baking soda and salt into a bowl. In a larger bowl, beat the butter and sugar together with an electric mixer. Medium speed tends to work the best at this stage. Beat the vanilla in and add the eggs 1 at a time. Switch the mixer to its lowest setting and slowly bring the buttermilk into the mix. Continue beating it until the mixture looks curdled. This is the sign that it’s time to add the flour, baking soda and baking powder.

 

Spread the batter into the two cake pans. Stick it in the oven for 35-40 minutes or until your cake passes the toothpick test. Flip the cakes out of their pans once they have baked all the way through and throw away the parchment paper.

 

  Voila! You’ve got a fantastic yellow cake recipe that can be topped with a frosting of your choice, although I swear, this cake is good enough to eat by itself.

I’m so delighted to guest blog for Connie today! Like many of you, I’m an avid reader and thought I’d take this opportunity to share with you one of my absolute favorite books, The Red Tent by Anita Diamant.

Have you read The Red Tent? Historically based and beautifully written, Anita’s fictional account about the women of the Bible captured my imagination and kept me enthralled beginning with page one, all the way to its end.

While in the Bible, Dinah (nor any women, really) is given no voice, and her life is only hinted at in a minor mention of violence within the more familiar chapters of the Book of Genesis that are about her father Jacob and his sons. Told in Dinah’s voice, this novel turns the short, brutal Bible verses into a full saga of Dinah’s life and the lives of her mothers and reveals the traditions and turmoil of ancient women.

Much of the story takes place in the red tent where women were segregated each month while they were considered, “unclean.” Their separation allowed them to develop remarkable connections for support among the wives, concubines and the children they reared. The men in this story, the men that are at the center of the Bible, are on the outside of the tent; Biblical events are the framework ~ a fascinating and imaginative story line!

For me, a great book makes me think about the themes woven within the story and how they may relate to my own life. Since reading this book, and particularly when I or my family or friends face obstacles and tragedy, Dinah’s story lingers with me and reminds me that we should embrace our womanhood. The beauty of birth, the sorrows and wonders of aging, the horrors of injustice are all written about in The Red Tent, and in real life, are all parts of our lives. I found the end of the book so beautiful and profound, especially as it touches on perhaps the cruelest fate ~ to be forgotten.

A great book also leaves me wanting more at its end. I read this book five years ago and I’m still waiting for Ms. Diamant to write another story! Maybe she’ll reimagine another tale for another woman mentioned in the Bible ~ I want another!

This is not a religious book despite its subject matter and setting. You can be Christian, Jewish or any faith or not, and still appreciate its themes beautiful prose, but be warned, there are some unsettling, violent passages. And you’ll also probably need a tissue at least once.

craziness~looking for guest bloggers!!

Hi everyone sorry I have been MIA Lately.  We had an emergency and ended up in the E.R. with my 7 year old.  So between all the doctors and follow ups and finding a house and packing and gearing up to move and taking care of my little sweetie until she recovers {and all the other usual stuff} we are kind of going crazy right now.
